Traditional Polish cuisine is usually quite oily, abundant, rich in meat, sauces and vegetables. Modern Polish cuisine, however, strives to increase diversity and focuses on healthy products.
Lunch often consists of soup as the first, and then the main dishes. Among the soups, borsch (red beet soup with or simply dirt) is perhaps the most recognizable: acute and slightly sour soup, served hot. Often poured out for dumplings (soup with dumplings or soup with dumplings), fried or served with rolls pate (pate with beetroot soup).
